Breakfast :
Barley mixed with pureed strawberries and plain Organic Vanilla Yogurt .
Tons o Cottage Cheese
Diced Nanners ( um yeah,, Bananas,)
Some of u may think that this is time consuming,, but in reality it's not. The barley is made in about 20 minutes, in a similiar fashion as rice. Make it in advance and free some of it in individual freezerbags . Save a small portion for a few days in the fridge. It will keep for several days. Take a tad out every morning when needed and add different elements to it each day to keep it interesting and tasty. Your as limited as your imagination. BArley is also a wonderful addtion to home made soups instead of pasta, and much more nutrient dense with tons o' more fiber than pasta. :)
Lunch:
Basmati rice with coconut and dried apriocts and a pat o butter.
( another deceiving creation, sounds involved, but in reality is super easy to make) You steam the rice as you normally would,,, come on now,, we all should know how to steam rice, and throw in a handful or two of dried apricots , mango works really well with this too, and 2 TBSP's of coconut. Add a tad more water than normal , as the dried apricots will absorb some moisture as well. This just gives the rice a lil extra flavor and personality.
Cubed fresh tofu.
Polenta
Blueberry juice
Red grapes ( organic of course. )
Sidenote: Grapes are on the top ten list of dirtiest ( ie: highly pesticide laden) fruits and veggies, so we always try to buy organic in this area. Buying all organic can be quite costly, though getting much more economical in time, I will try and post another blog sometime soon with the top ten dirtiest. If you cant afford to buy organic "everything" you should always try to aim to buy these organically)
Dinner: Mexican Fiesta

Mexi Corn ( Frozen roasted corn niblets, sauteed with onion, garlic, cilantro, shredded carrots , cumin, chipotle chili powder,
Fresh peas
Cheese quseadillas and sliced fresh avocado
Well, this was a "combo" dinner. I tried to please all palettes with this variety. Lil plum had the peas and rice, the corn was a tad on the spicy side for her. She also had some leftover polenta from lunch. Zack. lil big man, had the quesadillas and the corn, he wasnt fond of the rice,, picky teenager, go figure. . Me and the wonderful hubby ,, had a lil bit o everything.
Well, off to dreamland

Yum, that coconut rice sounds delish. Did *you* like it?
Yep I did. Not Coconutty or me though,,, I think next time I will use some coconut milk as well to give it more flavor.
