Weekend Recipes


Alright, so I have decided since the majority of my weekends are spent eating out and running errands,,, Lilys bites arent quite as interesting and usually consist of leftovers so I have decided to take this time to include recipes of note from the prior week on my weekend blogs.

HA ! and just when you thought you would miss me,,,,, ppppshawwwww!!!!!!!!!!!!!!!!


Six Minute Chocolate Cake
(Recipe from Moosewood cooks at home cookbook )

1 ½ cups unleached white flour ( i prefer to use wheat flour)
1/3 cup unsweetened cocoa powder
1 tsp. baking soda
1, 1/2 tsp. salt
1 cup sugar
½ cup vegetable oil( I use canola)
1 cup cold water or brewed coffee
2 teasoons pure vanilla extract
2 tablespoons vinegar

To make the cake preheat oven to 375 %
Sift together the flour, cocoa, baking soda , salt and sugar in to an ungreased 8 inch square or a 9 inch round baking pan.

In a 2 cup measuring cup measure and mix together the oil, water or coffee and vanilla..

Pour the liquid ingredients into the baking pan and mix the batter with a small fork or whisk.. When the batter is smooth, add the vinegar and stir quickly.

There will be pale swirls in the batter where the abking soda and vinegar are reacting. Stir just until the vinegar is evenly distributed throught the baterr. Bake for 25 to 30 minutes. Set the cake aside to cool

The cookbook calls to make a glaze for the top of the cake,, I just topped it off with some powdered sugar. This cake happens to be the EASIEST cake I have ever ever baked. MUCH easier even than a boxed cake. No dairy, no mixing bowls needed and more than likely, you have everything in your pantry to whip it up in a jiffy. Perfect after school snack for the lil ones, as a treat.
